The production of Lokita Mezcal begins with the careful selection of fully mature agave hearts, rich in natural sugars. This important first stage takes place at the Amantes Del Mezcal S.A. de C.V. distillery, in the very heart of Oaxaca, the birthplace of artisanal mezcal.
The cooked agave hearts are crushed for 5 days using a traditional millstone pulled by a horse (tahona). This slow, manual process allows the juice to be extracted while preserving the fibers and the full aroma of the agave.
The agave juice and fibers are placed in pine fermentation vats, where natural fermentation with wild yeasts takes place for approximately 4 days. This stage is key to the development of the mezcal's complexity and flavor depth.
The fermented agave mass is distilled twice in copper pot stills for 3 days. This artisanal process purifies the spirit, emphasizing its clarity, balance, and distinctive character.
Each batch is hand-bottled to guarantee the highest quality standards. The result is an exquisite mezcal, a true embodiment of craft, tradition, and dedication that honors the heritage of Oaxaca.
